Made from natural stone and recycled slag, Roxul ComfortBatt insulation is fire-resistant, impervious to moisture, and not at all itchy, says the manufacturer. The company also says that the semi-rigid batts are easy to cut, but you should use a serrated blade (such as a bread knife). ComfortBatt comes in R15, R23, and R28 varieties.
